The students of the food science and human nutrition program created a new kind of barbecue sauce. It offers a unique blend of curry spices combined with papaya puree and finishing with a hint of smoke flavor which is a nice addition to any pork or chicken dish.

When farmers harvest mature papayas, they accidentally harvest immature ones as well. These papayas will not ripen once picked off the tree. The University of Hawaii's Food Science and Nutrition students were asked to develop a product that would utilize these green papayas. They worked together and formulated this sweet chutney and continue to work with local farmers in efforts to find other sustainable solutions.
